HOMESTYLE BUTTERMILK CORNBREAD
How Many: one 8″ square pan
What you need to make the CORNBREAD:
- 1/2 cup butter
- 2/3 cup sugar
- 2 eggs
- 1 cup buttermilk (or as a substitute, 1 cup of milk and 1 tsp of lemon juice)
- 1/2 tsp. baking soda
- 1 cup corn meal
- 1 cup all-purpose flour (I opted for whole wheat)
- 1/2 tsp. salt
How to make the CORNBREAD:
- Preheat the oven to 375 degrees & grease an 8″ square baking pan.
- Melt the butter, stir in the sugar, add the eggs and beat until fully combined.
- Combine the buttermilk & baking soda…then add to the butter mixture.
- Stir in the corn meal, flour & salt until well mixed and few lumps remain.
- Pour the batter and bake for about 25-35 min. / toothpick check!
